Some of my cakes have layers, some are round and others work best on a baking sheet, but none of my cakes are as unique as my bunny cake. I’d love to take full credit for this cake, but it’s actually my mom’s recipe.

In fact, she would make this as my birthday cake almost every year… starting with my FIRST birthday!
It never loses its charm and it pulls on my heartstrings every time I see it. I hope it finds a way into your home as well as I’m almost certain it will put a smile on your face!
Bunny Cake
I never tire of making this sweet cake. What I know for sure is its sweet look is hard to resist! Enjoy!
Ingredients
Cake
- 1 white or yellow box cake mix
Icing
- 1 & 1/2 cups sugar
- 3 Tbsp light corn syrup
- 3 egg whites
- 1 & 1/2 tsp vanilla extract
- 1/4 cup water
Decoration
- 3 cups shredded coconut
- Various jelly beans, licorice, candies
Instructions
- Prepare cake as directed in two 8″ or 9″ round cake pans.
- Combine all icing ingredients, except vanilla, in a stainless steel bowl. Place bowl on top of a pot of boiling water. Beat well with electric mixer while the mixture cooks for 7 minutes. Mixture should stand in stiff peaks when the beaters are removed. Remove the bowl from boiling water, mix in the vanilla.
- After cakes have cooled, place one whole cake round on a serving tray or platter. From the second cake round, cut two convex-shaped ears from each side of the cake. Place on each side of the head for the ears. Use the remaining piece as the bowtie.
- Frost the entire cake, including the sides, with the icing. Pat the entire cake with coconut. Decorate the bunny face with jelly beans, licorice, and candy of your choice.
Truth is, I never get tired of making this sweet bunny cake. I guess it’s a sentimental thing.
When my kiddos were little, we had so many great memories making this cake together and I won’t lie… they still get that sweet smile on their face when they see that I’m making it.

But beyond the actual look of this bunny cake, it’s also incredibly tasty, too. Not to mention SUPER simple to make. I use box cake for the base (either white or yellow work). Then, I top it with homemade icing which is what really makes this cake special. And to mimic the fur of the bunny, I even add shredded coconut! YUM!
