When I’m in a rush, finding a quick breakfast that actually sticks with me throughout the day isn’t an easy task.
I can’t be the only one who quickly grabs a pastry or stops by a fast food restaurant after heading out the door…

But I created a recipe for simple and healthy baked egg bites and they might have me ditching the morning drive-thru for good.
The first recipe is for cheesy bacon egg bites packed with lean Canadian bacon and topped with sharp cheddar cheese.
And because I know a lot of you are vegetable lovers, I also created a veggie-packed bite filled with sauteed veggies.
How to Make Simple and Healthy Baked Egg Bites
I don’t call them simple for nothing. From start to finish, they took me around 30 minutes to make (INCLUDING baking time!).
If you’re making the veggie version, you’ll have to sautee some vegetables in a pan on the stove.
But if you’re making the bites with Canadian bacon, you can add the ingredients straight to your beaten eggs!
Each recipe below will give you 12 regular-sized egg bite muffins.
But to better show you how to make both recipes, I halved all of the ingredients and made 6 of each!
The baking time is the same for the cheesy bacon egg bites and the veggie-packed egg bites, so you can easily fill a 12-muffin tin with 6 of each.
Just make sure you place your mixed eggs in two separate bowls before adding the separate ingredients to your muffin cups!
Again, this is just the way I made mine. But EACH of the recipes will make 12 egg bite muffins if you use the measurements of ingredients listed.
When the tin is sprayed and you separated your mixture evenly among all 12 spots, it’s time to bake!
In just 20 minutes, you’ll have a simple, filling and flavorful breakfast that’s SUPER easy to take on the go.

Cheesy Bacon Egg Bites
Cheesy Bacon Egg Bites
Ingredients
- 12 eggs (if subbing egg whites, use 2 whites per egg)
- 1/4 cup scallions, minced
- 6 slices Canadian bacon (about 1 cup)
- 1/2 - 3/4 cup sharp cheddar cheese
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Preheat your oven to 350° F.
- Crack 12 eggs into a large bowl and mix with a hand mixer or manually.
- Mince scallions and add them to the egg mixture. Then, dice your Canadian bacon and add it to the bowl.
- Add salt and pepper to taste, and if you want a bit of a kick, add 1/2 tablespoon red pepper flakes.
- Spray a 12-muffin tin thoroughly with cooking spray. Stir the mixture RIGHT before pouring, then pour the egg mixture evenly into each of the 12 cups (should be about 1/2 inch from the top of the tin).
- Top each bite with cheese (approximately 1 tablespoon or add more if you please).
- Bake for 20 minutes, remove from the oven and let cool slightly before removing the egg bites. Enjoy!
Notes
Don't skip on stirring the egg mixture before pouring it into your tin. The Canadian bacon is heavy and can sit toward the bottom and the stirring will help the pieces distribute evenly!
Veggie-Packed Egg Bites
Veggie-Packed Egg Bites
Ingredients
- 12 large eggs (if subbing egg whites, use 2 whites per egg)
- 1 cup broccoli, chopped (steamed fresh or thawed from frozen)
- 1 cup mushrooms, chopped
- 1/2 cup red onions, diced
- 1 red bell pepper, diced
- 1/4 cup crumbled feta (optional)
- 1 tablespoon oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350° F.
- Crack 12 eggs into a large bowl and mix with a hand mixer or manually.
- Heat a pan or skillet over medium heat with 1 tablespoon oil. Dice your red onions and your red bell pepper and add them to the pan. Then, chop your broccoli and mushrooms and add them to the pan. Cook for about 5 minutes or until they're slightly soft.
- Add sautéed vegetables to your egg mixture. Next, add feta cheese, and salt and pepper to taste.
- Spray a 12-muffin tin thoroughly with cooking spray. Pour the egg mixture evenly into each section (should fill each baking cup).
- Bake for 20 minutes, remove from the oven and let cool slightly before removing the egg bites. Enjoy!
One of the best parts about making these baked egg bites is that you can make some changes to the recipes.
Not a fan of Canadian bacon? Add sausage instead!
More of a spinach person than a broccoli person? Make the swap!
These can also be made ahead of time for those busy mornings (or a mid-afternoon pick-me-up!). They’re super simple to store!
Layer them in an airtight container and place a paper towel between the layers of bites.
I like glass containers and have had great luck with the LocknLock brand!
They can be enjoyed for about 5 days after making them. Just place a couple of baked egg bites on a plate or in a microwave-safe container and heat them on high for 30-40 seconds.
