Whether you consider it more of a bread or more of a cake, this treat is a classic.
The density of the recipe will leave you satisfied but the subtly-tart lemon flavor will give you a refreshing little twist.

Lemon-Poppy Seed Bread
If I can eat a dish for breakfast and dessert, it’s a win in my book. That’s why I love this flavorful Lemon-Poppy Seed Bread.
Ingredients
Bread
- 2 cups sugar
- 3 eggs
- 1 1/2 tsp baking powder
- 1 1/2 tsp salt
- 1 1/2 tsp poppy seeds
- 3/4 cup vegetable oil
- 1 1/2 cups milk
- 1 1/2 tsp vanilla extract
- 1 1/2 tsp almond extract
- 1 1/2 tsp butter extract
- 3 cups flour
Glaze
- 1 cup powdered sugar
- 1 1/2 tbsp water
- 1 tsp lemon extract
Instructions
- Preheat the oven to 350°.
- Combine the first 10 ingredients in a large bowl and mix well. Then, slowly add the flour, making sure to scrape the sides of the bowl.
- Pour the mixture into a loaf pans. (you can bake as muffins too).
- Bake for 30 minutes, or until a toothpick in the middle of the loaf comes out clean (mini loaves may take less time, check after 20 minutes).
- While bread is baking, prepare the glaze. Combine all glaze ingredients in a small bowl and whisk together until the sugar is dissolved. Set aside.
- When finished baking, remove the bread from the pan and let it cool.
- Once it’s completely cooled, brush it with the lemon glaze.
Sure, lemon may seem like a summery flavor but I actually like baking this around the holidays.
