This creamy Tuscan tortellini soup is one of the easiest soup recipes I have in my collection. It’s a flavorful soup that only requires a few ingredients and not a lot of time. And it doesn’t matter the season, as a simple, tasty dish like this is perfect for busy weeknights (and leftover lunches the next day) outside of the winter months.
Tortellini Soup Options
This great soup is really versatile because you can add various ingredients to slightly change the flavor profile depending on your mood (or what you have on hand).
And YES! You can also make this tortellini soup recipe in the slow cooker. I added instructions for that down below the recipe.

I like to use hot sausage in this Tuscan tortellini soup, but any Italian sausage, chicken sausage, or ground turkey works too. I’ve even thrown in some leftover rotisserie chicken with delicious results! And in its most simple form, you could make this without any type of meat.
The base of the soup uses everyday ingredients from the grocery store. The chicken broth, crushed tomatoes, Italian seasonings, and cream cheese create a wonderful, light soup that works perfectly with fresh spinach (or try Tuscan kale) and your favorite tortellini pasta.

I think all types of pasta would work in this recipe—it’s really up to you. One other thought! Adding some white (cannellini) beans would be a nice addition. Again, use what you have in the pantry!
An Easy Tuscan Tortellini Soup To Make
There’s no long cook time with this creamy soup. Once you cook your meat, the rest of the ingredients are just dumped into your Dutch oven. You can even cook your cheese tortellini in the soup itself, so you’re only using one pot. Use frozen or fresh tortellini, and adjust your cook time accordingly.
I know this delicious soup is going to be something the whole family will enjoy. Don’t forget to top it off with some fresh parmesan cheese! If you have any leftovers, store them in an airtight container in the fridge for 3-5 days.
Easy Tuscan Tortellini Soup Recipe
This creamy tortellini soup uses minimal ingredients and is perfect for busy nights.
Ingredients
- 1 lb. ground Italian sausage (I like hot, but mild works too)
- 6 cups chicken broth
- 2 (14.5oz) cans diced tomatoes (I like using one with Italian spices and one that's fire roasted)
- 1/2 of an 11oz bag of fresh spinach
- 1 8 oz. block cream cheese, cut into cubes
- 1 tsp. dried oregano
- 1 tsp. garlic powder
- 1/2 tsp. ground cumin
- 1/2 tsp. red pepper flakes
- salt and pepper to taste
- 1 (18-20 oz) pkg. cheese tortellini
- grated parmesan cheese for garnish
Instructions
- In a large pot, cook sausage over medium heat until cooked through. If there's a lot of grease, drain then return meat to pan.
- Add broth, tomatoes(and juice), spinach and seasonings over medium low heat and bring to a simmer. Add cream cheese and continue to cook until melted into the broth.
- Turn up heat to medium. Add tortellini and allow tortellini to cook through according to pasta instructions.
- Stir soup to combine everything before serving.
- Top with fresh parmesan before serving.
Slow Cooker Instructions
It’s easy to make this recipe in the slow cooker, too. You’ll still need to cook the meat ahead of time. But then add everything EXCEPT the pasta to your slow cooker, cover, and cook on high for 3 hours, stirring occasionally. Add the tortellini (I’d use frozen as fresh might become too mushy) and continue to cook on high for 1 additional hour.
I hope you enjoy this soup as much as we do at our house. I can’t tell you how many times this simple soup saved me as a working mom! And the kids LOVED having leftovers in their thermos for lunch the next day (not a bad idea for you either!).
