If you’re looking for a quick and easy meal idea, nachos are always a good choice.

And one thing to know about me? I always… I mean ALWAYS… have cheese, chips, salsa and avocado on hand to make a batch.

My daughter Kylie is also a huge fan of nachos so I know that if I make them for dinner, they’ll be a hit no matter what!

Nachos The Just Jill Way

When I make my nachos, I typically use pulled chicken. But you can always use pulled pork too!

Here are some other ingredients I use to make my signature batch of nachos.

Ingredients:

  • 1 (16-oz) bag of tortilla chips
  • 2 cups shredded Colby Jack cheese, divided
  • 1-1/2 cups of pulled chicken
  • 1 cup thinly sliced roasted red peppers
  • 3 jalapeño peppers, sliced
  • 3/4 cup sliced green onions
  • 1/2 avocado, cubed
  • 1/2 – 1 cup black beans

Preparation:

  • Preheat the oven to 400°F.
  • Alternate the tortilla chips and 1-1/2 cups of cheese on a baking sheet.
  • Top with the pulled chicken, roasted red peppers and jalapeño peppers.
  • Add the remaining 1/2 cup of cheese.
  • Bake for 5-10 minutes, or until the cheese is melted. Top with the sliced green onions, avocado and black beans just before serving.

Pretty classic… but always tasty!

Ground Beef Nachos

Sheet pan recipes are more than welcome in my household. They always come out tasty and can feed a crowd with little effort involved.

I discovered this easy ground beef nachos recipe from The Hungry Hutch and the pictures alone make it look incredibly satisfying.

These nachos are topped with traditional ingredients like cheese, diced tomatoes, sour cream, avocados and more.

But the creator behind the recipe says that getting the chips extra toasty is the key to an irresistible dish!

Buffalo Chicken Nachos

I’ve been making my low-carb buffalo chicken bake for quite some time now.

And every time I make it I’m reminded of how much I love that buffalo chicken flavor! It’s also why this nacho recipe caught my attention.

The bulk of the work is cooking the chicken and seasoning it. But when that step is done, you can put these together in just about 10 minutes!

Who says you have to use chips to make a plate of Nachos?

This recipe from A Couple Cooks will show you otherwise. These nachos are made with Tater Tots!

They call them “Tachos” and they’re loaded with all of the well-loved toppings you’d find on a classic plate of nachos.

The slightly crispy crunch from the tots pairs perfectly with the creamy guacamole and sour cream. And I love that this recipe also includes corn. A little extra heartiness is always a good idea!

Made with cinnamon sugar-crusted chips and luscious melted chocolate, these nachos are a fun way to change up your classic dessert night.

The Spruce Eats also adds toppings like strawberries and whipped cream, but I’d venture to say that adding some toffee bits, extra chocolate chips and maybe even marshmallows would take them to a whole new level!
