Does anyone remember the commercials for Reese’s Peanut Butter cups where the debate of “You put your chocolate in my peanut butter? You put your peanut butter on my chocolate!” began?

My biggest weakness in the food world is peanut butter. Truly. I eat it by the spoonful almost every day. I just love it.

Add a little chocolate to the equation. Total YUM! So, in knowing that, it’s probably no surprise that I have several peanut butter and chocolate recipes in my recipe collection.

I rediscovered this recipe during the pandemic while I was digging through my Grandma’s recipe box.

My Grandma was a simple, home cook, who had the best collection of recipes. So many, like these no-bake cookies, contain simple, pantry ingredients and are quick to make.

Easy 3-Ingredient Peanut Butter Cookies

I love making these cookies because I always have the ingredients on hand. ALWAYS. They’re also a great cookie for anyone who is gluten-free.

This is the only peanut butter cookie recipe I’ve really ever used. I’ve tried other versions, but this one is easy, bakes up soft, and just works. That’s the kind of simplicity I like in my life!

And while the chocolate kiss is the perfect topping for these cookies, these are good as simply a stand-alone peanut butter cookie too.

I’ve even put a thumbprint into these and added a little raspberry jam. The perfect way to enjoy a PB&J!

Let’s Make Scotcheroos!

There was always a pan of scotcheroos on my Grandma Metzger’s kitchen counter. I can picture it like I was just there.

I know there were days when my Grandma would make a pan in the morning, only to make another pan before dinner because the first batch was gobbled up by anyone passing through the kitchen!

The rule of thumb was always that you should take two, because there may not be any left if you wanted to go back for more! A sentimental favorite of mine for so many reasons, not the least of which is how good they taste! Major ENJOYABLE!!

Peanut Butter Chocolate Scotcheroos

A sentimental favorite of mine for so many reasons, not the least of which is how good they taste! Majorly ENJOYABLE!!

Ingredients

  • 1 cup sugar
  • 1 cup dark corn syrup
  • 2 tbsp butter
  • 1 cup crunchy peanut butter
  • 6 cups of Rice Krispie cereal
  • 1 cup butterscotch chips
  • 1 cup chocolate chips

Instructions

  1. Butter a 9” x 13” baking dish and set aside.
  2. Bring the sugar, corn syrup, and the butter to a boil in a medium-size saucepan. Remove from heat. Add the crunchy peanut butter and stir until peanut butter has melted into the mixture. Mix well.
  3. In a large bowl, add rice krispies.
  4. Pour warm peanut butter mixture over the rice cereal. Stir to evenly coat all of the cereal. Put into buttered dish and press mixture to evenly distribute.
  5. To prepare the topping, melt the butterscotch and chocolate chips in a small saucepan over low heat and then spread the mixture over the rice cereal mixture.
  6. Cool until the topping is set, then cut into squares.

Play With The Flavors

If you really want to fall into the peanut butter abyss with these scotcheroos, you can substitute peanut butter chips for either the chocolate or the butterscotch chips for the “frosting.” And yes, you can use only chocolate chips too, without butterscotch.

I stay true to the way my Grandma made them, but just wanted you to know you can play around with the topping!
