Easy Cinnamon Roll Coffee Cake

Easy Cinnamon Roll Coffee Cake

All the cinnamon sugar goodness you love in a cinnamon roll in an easy to make cake.

Ingredients

  • For Cake:
  • 3 c. all purpose flour
  • 1 c. sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 1/2 c. milk
  • 2 tsp. vanilla
  • 1 stick (1/2 c.) of butter melted
  • For Cinnamon Swirl:
  • Additional 1 1/2 sticks (3/4 c) butter, room temperature
  • 1 c. brown sugar
  • 2 tbsp. all purpose flour
  • 1 tbsp. cinnamon
  • For Glaze:
  • 5 tbsp. milk
  • 1 tsp. vanilla
  • 2 c. powdered sugar

Instructions

  1. Preheat oven to 350. Lightly grease a 13x9 baking pan.
  2. In medium bowl, combine flour, sugar, salt, baking powder, eggs, milk and vanilla. Mix until all are incorporated.
  3. Slowly add melted butter to batter and continue to mix until butter is thoroughly mixed into batter.
  4. Spread batter in 13x9 pan.
  5. In a separate bowl, cream together softened butter and brown sugar. This may take a few minutes as you want this to be smooth. Add flour and cinnamon to sugar/butter mixture and mix together.
  6. Add dollops of cinnamon butter mixture evenly all over the top of the cake batter. Take a butter knife about halfway into the batter and swirl the topping through the batter, going up and down the length of the pan and then again side to side. I keep swirling until the top of the cake looks "marbled".
  7. Bake cake for approximately 30 minutes, or until knife inserted in center comes out clean.
  8. After removing cake from oven, set aside and mix together glaze ingredients in a small bowl.
  9. Drizzle glaze over warm cake, cut and serve.
