This easy to make cinnamon roll coffee cake has been a go to recipe for as long as I can remember. I mean, who doesn’t love the cinnamon sugar buttery sweet goodness of a cinnamon roll? So why not just bake up those flavors in a cake? Am I right? I thought so!

Let’s Bake Coffee Cake
This coffee cake bakes up in a 13×9 pan, so it’s easy to make, bake and take to your next gathering. And don’t let the term “coffee cake” limit you to serving this only for breakfast or brunch! You could easily call this a cinnamon sugar cake and serve it at your next dinner party.

The cake part of this recipe is a very simple white cake that is light in texture and the perfect partner to the cinnamon sugar butter mixture that whirls its way through the cake. A simple powdered sugar glaze tops it off, adding the perfect amount of sweetness to finish it off.

Simple Coffee Cake Ingredients
No only is this cinnamon roll cake easy to make, it uses the simplest of ingredients, all of which you likely have in your pantry and refrigerator. That’s one of the reasons why I’ve relied on this recipe for such a long time…I always have the ingredients to make this coffee cake so if I need to whip something up last minute or I’m just in the mood to bake, this cinnamon roll cake fits the bill.

I think this cake is best served warm, either soon after baking, or gently heated before serving. It’s a wonderful coffee cake to bring to a pot luck, a friends’ gathering or to make on a weekend morning for company.
Easy Cinnamon Roll Coffee Cake
All the cinnamon sugar goodness you love in a cinnamon roll in an easy to make cake.
Ingredients
- For Cake:
- 3 c. all purpose flour
- 1 c. sugar
- 4 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 1 1/2 c. milk
- 2 tsp. vanilla
- 1 stick (1/2 c.) of butter melted
- For Cinnamon Swirl:
- Additional 1 1/2 sticks (3/4 c) butter, room temperature
- 1 c. brown sugar
- 2 tbsp. all purpose flour
- 1 tbsp. cinnamon
- For Glaze:
- 5 tbsp. milk
- 1 tsp. vanilla
- 2 c. powdered sugar
Instructions
- Preheat oven to 350. Lightly grease a 13x9 baking pan.
- In medium bowl, combine flour, sugar, salt, baking powder, eggs, milk and vanilla. Mix until all are incorporated.
- Slowly add melted butter to batter and continue to mix until butter is thoroughly mixed into batter.
- Spread batter in 13x9 pan.
- In a separate bowl, cream together softened butter and brown sugar. This may take a few minutes as you want this to be smooth. Add flour and cinnamon to sugar/butter mixture and mix together.
- Add dollops of cinnamon butter mixture evenly all over the top of the cake batter. Take a butter knife about halfway into the batter and swirl the topping through the batter, going up and down the length of the pan and then again side to side. I keep swirling until the top of the cake looks "marbled".
- Bake cake for approximately 30 minutes, or until knife inserted in center comes out clean.
- After removing cake from oven, set aside and mix together glaze ingredients in a small bowl.
- Drizzle glaze over warm cake, cut and serve.
