Whether you observe Lent or you’re simply on the hunt for some new meatless meals, I dug up a few of my recipes that you can make as you head into the upcoming season.
Of course, I enjoy recipes like my Cheesy Bacon Broccoli Quiche and my Cheesesteaks Three Ways, but I also like to change things up with some vegetarian and fish-based options.
So today, I’m sharing some of my favorite meatless meals that are easier to make than you think! Check them out below.

Sautéed Shrimp with Tomatoes, Herbs & Feta
Shrimp can be used as an appetizer, as an ingredient or as the main star of a meal! That’s why I always try to keep some frozen in my house. And this Sautéed Shrimp bake recipe? It’s one of my absolute favorites.
The shrimp is accompanied by traditional Italian flavors and it can be served in multiple ways. I like to serve it over pasta, but you can also put it atop rice, over a salad or with some crusty French bread.
Easy Fettuccine with Shrimp
Some people make fettuccine without any meat. Others choose chicken. But in my household, we always eat fettuccine with shrimp.
I recently shared this recipe for the first time. But those of you that made it said it was a hit! It’s packed with a variety of textures and flavors. I recommend serving it alongside a side salad and crispy bread… what isn’t made better with bread??

Halibut and Shrimp Seafood Kebabs
I originally made this recipe around Memorial Day but I promise you, it’s perfect no matter the time of the year.
This recipe is special because it includes two types of seafood (and if you ask me, the more the merrier!). In addition to the flavor that the halibut and shrimp naturally provide, I created a flavor-packed marinade you can use to take this recipe to a whole new level.
HERE is the recipe to make the kebabs for your next cookout!
Quick and Easy Shrimp Scampi
See those tender, buttery shrimp? They taste even better than they look.
And while you can eat them alone, I like placing them on top of pasta or eating this dish alongside crusty bread (to lop up all of the juices!).
If you’re a garlic fan, this recipe is for you. Because these beautiful red Argentinian shrimp are cooked in a bed of garlicy goodness mixed with white wine, olive oil and butter. YUM! Find the recipe HERE.
Stuffed Zucchini
My stuffed zucchini isn’t vegetarian, but you can easily omit the added sausage for a dinner that’s just as tasty as the original!
Not all of my recipes are the “healthiest” but this is one that is definitely on the healthier side. Low in carbs and filled with nutrients, it’s a good option for those looking to be a little more health-conscious.
To find everything you’ll need to make the stuffed zucchini, you can see the full recipe HERE.
Newport Beach Clam Chowder
This isn’t the first time I’ve shared my Newport Clam Chowder, but I feel like you all like this one!
I originally tried it when I was a little girl living near Newport Beach, CA. We actually went “clamming” and gathered the ingredients for dinner that evening!
The trick to this recipe is that it actually includes corn and sour cream… who would have thought! But before you knock it you have to give it a try. Find the recipe HERE.
So if you’re in need of some inspiration for meatless meals, you can use this list of mine for all your seafood and veggie needs.
From my kitchen to yours,
