It’s hard to find a recipe that works well for breakfast, lunch and dinner. But that’s where quiche comes in!
I love ordering quiche when I’m dining at a restaurant but I also love to make it at home. And if you do some browsing through justjill.com, you’ll see that I have a few quiche recipes in my collection.
Each one is a little different. One is crustless, one makes the most of holiday leftovers, and one was born from necessity… but turned out great!

I had leftover broccoli on hand and far too many close-to-expiring eggs. I remembered how much I love Quiche Lorraine when I was a little girl, and that was the inspiration for this recipe!
I knew this easy cheesy bacon broccoli quiche was a hit when my daughter Kylie looked at me when my daughter Kylie said “Mom… you can make this for me anytime!”

Easy Ham and Cheese Crustless Quiche
This easy ham and cheese crustless quiche is my newest quiche recipe. Well, I’ve been making it for a while, but I only shared it with you recently!
If you haven’t had the chance to check it out, I encourage you to give it a try… it’s one of those “hit it out of the park” recipes.
This quiche is also healthy and filling. The eggs and ham are filled with protein, the spinach is packed with nutrients.

The thing about quiche is if you have a good foundational recipe, you can change it up however you’d like. I first made this roasted ham and veggies with my Easter dinner leftovers.
This is really packed with everything you could ever want in a quiche dish.
