Now that the school year is starting and the official start of fall is near, schedules tend to get a bit busier! But just because your schedule is busy doesn’t mean you need to skimp on lunch. It just means you need a quick and easy way to get in a filling meal!

It’s easy to reach for the closest thing in the pantry or to take bites out of the leftovers in the fridge, but putting together something a little more substantial will keep you feeling better for longer. Good for the body and mind!

Struggling to think of some ideas? I took to the web to find some super easy lunch ideas you’ll want to check out. And of course, I added a few of my personal favorites too!

Tuna on Triscuits or Crackers

One of my favorite go-to meals in a hurry is tuna fish on Triscuit crackers. The prep is minimal and it’s packed with protein to keep me going throughout the day.

I prep my can of tuna (5 ounces) with a couple of tablespoons of mayo, some salt and pepper to taste, a little bit of garlic powder, and a squeeze of lemon. Mix it together and viola! One of the easy lunch ideas out there.

Lasagna Pizza Cups

My lasagna pizza cups are one of my go-to ideas when it comes to a quick lunch. Not only are they simple to make, but they’re packed with flavor and I love that they leave me feeling satisfied.

Mediterranean Salmon Veggie Grain Bowl

I can’t tell you how delicious this grain bowl looks to me. The variety of flavors, colors, and textures make it even more desirable! Plus, Ree Drummond cooks the salmon in the easiest way possible.

CrockPot Shredded Chicken

While this take a bit more time, I love that you can make a big batch to enjoy throughout the week. The pictures show that they make great tacos (which they certainly do!), but you can also use the meat on top of pizza, in soup, or in a wrap!

Quick Taco Wraps

Let’s stick on theme with these quick taco wraps from Taste of Home. The prep time is only 15 minutes and it’s nice that you dress them up or leave them as plain as you’d like.

Easy Chicken Salad

Also from Taste of Home is this surprisingly simple chicken salad recipe filled with red grapes, pecans, and of course, chicken! It’s super creamy and yummy, and the pecans add a bit of a crunch.

Veggie and Ranch Cold Pizza

This may be one of the simplest recipes in my collection. But enjoyable every time! I enjoy adding a variety of veggies on top (a great way to get rid of leftovers), but you can get creative in whatever way you’d like.

Pesto Caprese Panini

Okay… yum! Sometimes, a good sandwich is just the best way to go and this one from The Pioneer Woman looks incredible. If you don’t have a panini press, no worries! You can cook it on a grill pan or skillet instead.

Sheet Pan Nachos

Ask my kids. I make these sheet pan nachos more often than I’d like to admit. I like to top them with shredded chicken, cheese, salsa, and extra veggies if I have them around. The prep takes less than 5 minutes and cooking them in the oven at 400 degrees takes around 5 minutes too (you can watch them to see when the cheese melts). Tasty if you ask me!
